Do you ever get into one of those moods where you can’t find anything sweet in the house…but you HAVE to have something?
I was craving something sweet…and even though I had a bag of M&Ms I decided to make something from nothing. I like to get creative in the kitchen. Really, you don’t always need a recipe to make something delicious! But for those of you who like structure, here is a general guideline of “how to” make my new creation: Sweet Popcorn Crunch (I just came up with that name…lol).
Step 1: On the stovetop or 4 quart popper, pour 1/2 cup of popcorn kernels and3 tbsp of oil into a heavy-bottom pan or popper. Cover and set the heat to medium-high. When the popping slows to about 2-3 seconds, remove from heat (or unplug).
Step 2: Add the following ingredients into a large glass bowl — popped popcorn, 1/2 cup of chocolate chips, 1/2 – 1 cup mini marshmallows, 1/4 cup of chocolate sprinkles, 1/2 – 1 cup dried cranberries or raisins (optional).
Step 3: Melt 1 1/2 cups of white chocolate melts or chips in a microwave safe container. I like to heat in 30 second intervals (stirring in between) so it won’t burn or clump.
Step 4: Pour the melted chocolate onto the popcorn and other ingredients and mix well.
Step 5: Put wax or parchment paper onto a cookie sheet. Lay the mixture onto the cookie sheet to cool.
Step 6: EAT it or package it in ziplock baggies for later.
Other option ingredients to try…crushed up Oreos, peanuts, M&Ms…what else would you try?
