My daughter is spending the week with my parents and sister… and my son is home with us (he has been attending music camp all week). Yesterday I thought it would be fun to go on an adventure and test out a new place to eat. I searched Restaurant.com and found several options. My son has been asking for pancakes. So we headed down the mountain for Country Waffles, unfortunately they closed at 2:00 and we got there at 2:15. Oops. Oh well. I pulled out my phone and searched for another restaurant nearby. My son still wanted breakfast for lunch so we drove over to BJ’s Kountry Kitchen. Oh no… they were closed too! Guess I should have checked the website for the hours, but I didn’t! So on to our third restaurant: Ediberto’s Mexican Food. This was only about a 10 minute drive from Fresno… and completely worth it!
One of the nice features on Restaurant.com is you can return your gift certificate for credit and buy a new gift certificate at a later time. This trip I didn’t purchase the certificate until we parked in front of the restaurant (ahhhhh the convenience of cell phones with wi-fi). You can purchase directly from the website or the app.
I love Mexican food! I swear I could live off burritos. My son is slightly picky, so I was hoping he would be flexible. Luckily they had one of his favorites… tostada!!! I had a harder time choosing an item for lunch. They had so many delicious plates to choose from. It took me a few minutes, but I decided to have 5 rolled tacos.
Using my gift certificate was simple. I placed my order, then handed her my phone. She quickly validated my $5 off $10.
We found an empty table to sit at and my son watched the TV while our order was being made. They had a TV in the corner (it was lunch time so there was a small rush after we placed our order). This seems to be a local favorite. It’s located in the same parking lot as Walmart, so a few of the employees were enjoying lunch there too!
When our food was ready, we both dived in! My son enjoyed his tostada (though there were too many beans on it for his taste). He took off the top tortilla and broke it into pieces, then dipped his “chips” into the beans.
My rolled tacos were delicious! They smothered them with sour cream, guacamole, lettuce, and cheese. Oh my YUM! I ate them all up!
I can’t wait to take my husband to Ediberto’s Mexican Food! We will definitely go back sometime soon!
