Early this week I decided to try one of the desserts I pinned ~ Frozen Banana Bites.
- Chocolate (I used chocolate flavored Almond Bark…my local discount store didn’t have chocolate chips…unheard of right? So I made due with what I could find. You could use dark chocolate to make this a healthy snack.)
- Peanut butter (I still had some Tropical Traditions Coconut Peanut Butter left, so I used that.)
- 2 sliced bananas (approx. 1/2 inch width)
- unsweetened coconut (Of course…I had to use Tropical Traditions Coconut Flakes)
Now, I didn’t measure how much of the chocolate or peanut butter…I just eye-balled it! You will want to put it in a microwavable container (I used my glass Pyrex measuring cup). Place chocolate/peanut butter into the microwave and heat for 30 seconds, stir, and repeat until the chocolate/peanut butter is completely melted and smooth.
Dip the banana slice into the chocolate/peanut butter. Use a spoon and/or fork to completely cover the banana. Place the banana onto lined cookie sheet (wax paper or aluminum foil) to cool. Sprinkle with unsweetened coconut…and you are DONE!!!
Put the cookie sheet into the freezer and eat when frozen! If you are going to serve to young kids, then you may want to let them sit out for a little while so the kids can easily eat them. I loved them frozen…but my kids were not fans…crazy kids!
