I love to cook! And thanks to Pinterest, I have had fun testing out new recipes. With or without a recipe, you can typically find me in the kitchen whipping up something yummy. When I was offered to test out the Gold Label Virgin Coconut Oil from Tropical Traditions ideas started floating into my head: Coconut Chicken, Vegetable Stir-Fry, Coconut Halibut…oh what fun I could have with Coconut Oil.
Coconut Oil is a staple in my pantry. It is my go-to for all of my cooking needs. We are constantly making coconut flavored EVERYTHING. Stir-fries are one of my favorite meals to make with coconut oil.
Please note that the Coconut Oil does solidify under 76 degrees (during the winter, living in the mountains, our house is typically around 70 degrees…so the oil is in a solid state). According to the packaging, you can re-liquefy the oil by putting it in a pan of warm water…but I typically don’t re-liquefy, I just take a spoon and scooped up the amount needed and heat in the pan/wok. Within a few seconds of heating, the oil will melt.
Tonight I am going to make a Coconut Shrimp Stir-Fry with carrots and zucchini…anyone getting hungry? It’s super easy. Just put a dollop of Coconut Oil into your wok and heat on medium until the oil liquifies. Add carrots and zucchini (cubed or sliced) and mix regularly until the vegetables are soft. Next add defrosted shrimp and cook until the shrimp turn pink. Serve over white rice (I kicked my rice up a notch and added a tablespoon of Coconut Oil to the rice and water as it cooked in the rice cooker…delicious)!

Did you know you can use Coconut Oil in non-food ways? My sister swears by coconut oil and has told me of two great uses for it (please note that these uses are tested by my sister and other family members, Tropical Traditions cannot validate these claims). According to my sister, coconut oil is “magic.” Hahaha! Yes, MAGIC! Besides cooking with it, she loves to use coconut oil in her hair and on her body. Have you ever tried coconut oil in your hair? I have…and it is one of the BEST conditioners I have ever used! Have you used coconut oil on your skin? It’s a great moisturizer! Okay…so yes, Tropical Traditions does make products specific for your hair and body…so maybe this jar will just stay in my pantry (I just thought you might want to try it out).
How to use Coconut Oil
You can find fun recipes on the Tropical Traditions website. Yum…check out the Coconut Latte recipe:
- 1-2 tablespoons coconut cream concentrate, optional
- 1-3 tablespoons coconut oil
- 2/3 cup whole milk
- 1 cup espresso
- 2 tablespoons coconut flavored syrup (or desired flavor and amount)
Brew espresso and add flavored sweetener of your choice (or omit) and coconut cream concentrate if using. Pour into serving mugs.
Using espresso steamer steam milk and coconut oil to 140 degrees. Add to espresso and enjoy!
