Sometimes it’s just time to try something new. I was craving mashed potatoes, but let’s face facts…that’s not really a healthy choice. Too many carbs for me, especially since I am on a journey to losing weight. So, what do you do? I searched Pinterest and saw so many wonderful recipes for Cauliflower “Mashed Potatoes” that I decided to create my own version.
Cauliflower “Mashed Potatoes”
- 1 head of cauliflower
- 1/4 cup of mushrooms sliced
- 1 tsp of minced garlic
- 2 tbsp of low fat cream cheese
- 1/4 cup of grated Parmesan cheese
Cut the cauliflower into small pieces. Place into a large pot of boiling water. Cook until the cauliflower is fork soft.
While the cauliflower is cooking, you will want to saute the mushrooms and garlic. I sliced the mushrooms and used just a small amount of olive oil to cook them. Once they were almost done, I added the minced garlic. You don’t want to over cook them…just heat them up and soften them.
Once everything is cooked, drain the cauliflower. Add the cauliflower, mushrooms and garlic into a food processor. Blend, then add 2 tbsp of low fat cream cheese…and blend.
Now add 1/4 cup of Parmesan cheese and blend. Salt and pepper to taste.
Serve and eat right away! Your family won’t even know they are eating cauliflower…because they taste just like mashed potatoes!
